Zucchini is an easy-to-grow vegetable and we always have too much harvest. It is a challenge for me to cook them in different ways. Zucchini is not an Asian vegetable but I like them cooked with soy sauce. This is a typical stir-fry dish and starch-coated pork and crunchy zucchini are beautiful in this spicy sauce.

2 to 4 Servings
Ingredients
1 to 2 Zucchini *sliced to 3 to 4mm thickness
1 clove Garlic *finely chopped
200 to 300g Pork *thinly sliced
Salt & Pepper
Potato Starch Flour
1 tablespoon Vegetable Oil
1 teaspoon Sesame Oil
Sauce
1 tablespoon Sugar
1 tablespoon Mirin
2 tablespoons Soy Sauce
1/2 tablespoon Toban Djan (Chili Bean Sauce)
1/2 tablespoon Vinegar
Method
- Salt & Pepper to the sliced Pork, add some Potato Starch Flour and coat them well.
- Make the sauce by mixing all ingredients together.
- Heat Oils in a frying pan and cook Pork. When the pork changed colour, add Zucchini and Garlic and cook for a few minutes, but do not over cook.
- Add the sauce and combine everything well. Serve with freshly cooked rice.
