Simple is often the best. ‘Tuna & Mayo’ is a yummy combination. I knew Broccoli would go well with it. Then I added Sweet Corn and a little bit Onion. Such a super simple salad, so easy to make, and so delicious. You can cook Broccoli as you like, but my favourite method is pan-steam-fry. It is a very quick method and you don’t need a lot of water.

Ingredients

1 head (*about 350g) Broccoli *cut into small florets, thick stem sliced
1-2 teaspoons Oil
2 pinches Salt
2 to 3 tablespoons Water
1/2 cup Frozen Corn Kernels
1 can (95g) Tuna *I used Tuna in Springwater
1/8 Onion *optional, finely chopped
Salt & Black Pepper
4 to 5 tablespoons Japanese Mayonnaise

Method
  1. Drizzle Oil over a frying pan and arrange Broccoli pieces. Sprinkle with Water and Salt. Cover with a lid and cook over medium heat for a few minutes.
  2. When the Water in the pan is evaporated, remove the lid, and stir. Then transfer to a mixing bowl. Add Frozen Corn Kernels and mix.
  3. Add drained Tuna and Onion, season with Salt & Pepper, and mix. Finally add Japanese Mayonnaise and combine.
