Japan’s southern island Okinawa has a traditional sweet called ‘Chinbing’. It is a thin pancake similar to Crepe, but its texture is similar to Mochi. It’s a very simple sweet, but absolutely delicious.

Ingredients

1 cup Self-Raising Flour *OR Plain Flour & 1 teaspoon Baking Powder
1 pinch Salt
1/2 cup Muscovado *firmly packed
1 cup Water
1 teaspoon Oil
Oil for cooking

Method
  1. Mix Muscovado and Water in a bowl. Add other ingredients and whisk until well combined and smooth.
  2. Heat a frying pan (non-stick preferred) over lower heat. Oil the pan very lightly and cook small pancakes, about 12cm in diameter, until bubbles appear on surface and the edges get cooked. Carefully turn as the pancakes are soft, and cook for 1 to 2 minutes.
  3. Transfer to a plate. Cover loosely with a clean tea towel to keep warm. Repeat with remaining batter, oiling pan between batches.
  4. Gently roll them up and enjoy.
