My son didn’t eat vegetables when he was young. I used to make Hamburger Steaks with lots and lots of vegetables finely chopped up and mixed with minced meat. That way he ate any vegetables without knowing he was eating them. This mixture can be formed into round patties and cooked in a frying pan, but it’s much easier to bake it in the oven.

Makes

4 to 6 servings

Ingredients

500g Minced Lean Meat *Pork, Chicken, Beef OR Lamb
1 Onion
1 clove Garlic *finely chopped
4-5 florets Cauliflower
4-5 florets Broccoli
1/2 Carrot
4-5 Mushrooms
1 Potato
*Other Suggestions: Peas, Green Beans, Asparagus, Asian Greens, Asian Mushrooms, etc.
*You can add cooked Rice as well.
1 Egg
1 cup Panko Breadcrumbs
1/2 to 1 teaspoon Salt
Freshly Ground Pepper as required
Herbs of your choice *Today I used Oregano and Basil
1/4 cup grated Parmesan

Method
  1. Preheat oven to 180℃. Line a loaf tin with baking paper.
  2. All vegetables need to be finely chopped OR minced. The easiest method is process them using a food processor.
  3. Place the vegetables in a large bowl, discard excess liquid from processed vegetables, add all other ingredients, and mix well until evenly combined. Spoon the mixture into the prepared loaf tin, and smooth the surface.
  4. Bake for 50 to 60 minutes or until cooked through. Enjoy with your favourite sauce.
