I wanted to make Ceviche for a long time since I enjoyed it at my brother-in-law’s house, but I just couldn’t find fresh Fish fillets that were suitable for Ceviche. Then yesterday, my family enjoyed a special Japanese dinner of Sushi and Sashimi, that we bought from a Japanese take away shop, for our wedding anniversary. And, there was some leftover Sashimi, so I used them to make this quick and easy version of Ceviche.

Makes

2 Servings

Ingredients

200g Sashimi
*Note: The Sashimi pack that I used contained King Fish, another unknown White Fish, Tuna and Salmon
1/4 to 1/2 Red Onion *thinly sliced
6 Mini Tomatoes *cut in half 20g
Coriander Leaves *chopped

Dressing
2 tablespoons Lemon OR Lime Juice
1 to 2 tablespoons Olive Oil
1/3 teaspoon Salt *add extra as required
1 small clove Garlic *grated
*Note: You may wish to add some Chilli. e.g. Fresh Chilli, Chilli Flakes, Chilli Sauce OR Tabasco, etc.

Method
  1. Cut Sashimi pieces in half. Prepare the vegetables.
  2. Combine all the Dressing ingredients in a mixing bowl. Add all other ingredients and mix to combine. Rest in the fridge for 10-15 minutes, and enjoy.
