Avocado goes so well with Japanese seasonings such as Soy Sauce, Wasabi, Japanese Mayo, ‘Ponzu’, etc. Do you know it goes well with Kimchi, the Korean salted & fermented veggies? I had a jar of Wombok Kimchi in the fridge, but it had turned quite sour. I usually cook sour Kimchi, but it was too hot and I didn’t want to cook anything. So I mixed it with Avocado, and added some Sesame Oil and Sugar to soften the sourness. It turned into a delicious side dish!

Ingredients
1/2 cup Kimchi
1 Avocado *cut into small pieces
1/4 teaspoon Sesame Oil *for flavour
1/8 teaspoon Sugar *optional
1 tablespoon Toasted Sesame Seeds
1 Spring Onion *finely chopped
Method
- Cut Kimchi into the size that is easy to eat.
- Place all ingredients in a bowl and mix to combine. *Note: Sugar is optional. I add it when Kimchi is sour.
