Balsamic Vinegar is an essential ingredient for my cooking. I particularly love Aged Balsamic Vinegar that is quite sweet. For this dish, Balsamic Vinegar is used not only for the marinade but also for the sauce. They both need sweetness. If your Balsamic Vinegar lacks sweetness, add some Sugar.

500 to 600g Chicken Thigh Fillets
Salt & Black Pepper
1 clove Garlic *grated
1 tablespoon Dry Italian Herb Mix
2 tablespoons Balsamic Vinegar
1 tablespoon Olive Oil

Fresh Tomato Sauce
1 Tomato *diced
1/4 Red Onion *finely chopped
1 clove Garlic *minced or grated
1 handful Fresh Basil *chopped
1-2 tablespoons Balsamic Vinegar
1-2 tablespoons Olive Oil
Salt & Freshly Ground Black Pepper

  1. Season Chicken Thigh Fillets with Salt and Black Pepper quite well. Then add Garlic, Dry Italian Herb Mix, Balsamic Vinegar and Olive Oil, massage well, and allow to marinate in the fridge overnight or at least half a day.
  2. Cook marinated Chicken Fillets on a BBQ plate, frying pan or grill pan. Serve with plenty of salad.
  3. To make Fresh Tomato Sauce, combine all the ingredients and season with Salt & Freshly Ground Black Pepper. I recommend to make this sauce just before you serve the Chicken.
