This is a super-quick & easy Fresh Tomato Salsa to enjoy with corn chips or flat bread. It’s great as a side dish as well. By mixing it with cooked seafood, you can make a delightful platter instantly. I have just one crucial advice for you. Make sure you taste the fresh chilli before adding it! You could ruin the salsa, and I have learned it from my experience!

2 to 3 Servings

Ingredients

2 large Ripe Tomatoes
1 small clove Garlic *finely chopped
1/6 to 1/4 Red Onion
1/2 to 1 Red Chilli OR Jalapeño *Pickled Jalapeño is also good
2 to 3 tablespoons chopped Coriander Leaves
1 tablespoon Lime Juice OR Lemon Juice
Salt & Black Pepper

Method
  1. Remove seeds (watery parts) from Tomatoes and finely dice. Finely chop up Garlic, Onion and Chilli. *Note: Make sure you taste the Chilli before adding it!
  2. Place all ingredients in the bowl, season with Salt & Black Pepper. If the Tomato Salsa is too hot, the only thing you can do is to add more Tomatoes, and a little bit more Onion and Coriander.
  3. If the chilli is not hot enough, you can add Tabasco OR Chilli Powder. Pickled Jalapeño is also good.
  4. Enjoy with corn chips, flat bread or rice crackers.
