
I have been trying to lose weight lately, but I don’t want to give up Carbohydrates such as Rice and Pasta. I am a big fan of ‘Spaghetti Aglio Olio e Peperoncino’ (Spaghetti Garlic Oil & Chilli), the famous Italian pasta dish. This is how I reduce carbs and calories without compromising the deliciousness of the dish. I replace a part of Spaghetti with Enoki Mushrooms.

Ingredients
1/2 serving Spaghetti
Salt
100g Enoki Mushrooms
*Note: Reduce Spaghetti even further and add more Enoki for lower carbs & calories
1 tablespoon Olive Oil
1 to 2 cloves Garlic *thinly sliced OR coarsely chopped
Chilli Flakes as required *I used s small Dried Chilli
Finely chopped Spring Onion
Soy Sauce *optional
Method
- Cook Spaghetti in boiling salted water according to the instruction on the package.
- Cut off the bottom of Enoki, clean them, and tear into smaller clusters. Prepare Spring Onion, Garlic and Chilli.
- When Spaghetti is nearly cooked, heat Olive Oil and Garlic in a frying pan over medium heat. (*Do not add Garlic to hot Oil.) When Garlic started browning, add Chilli and Enoki, stir-fry until Enoki is slightly wilted, it won’t take long at all, and add 1 pinch Salt and stir.
- Add cooked Spaghetti with some water that has been cooking Spaghetti, and mix to combine. Place on a plate, sprinkle with some Spring Onion, drizzle a small amount Soy Sauce if you like it, and enjoy it.
