This is a quick & easy Mince dish that is similar to my ‘Stir-fried Pork Mince & Cabbage with Spicy Miso Sauce’, but it is much easier. Today I used Pork Mince, but Beef Mince is also nice. Basically I stewed Mince, Cabbage and Onion in curry flavoured soup. Enjoy it with freshly cooked Rice.

Ingredients

500g Pork Mince *OR Beef Mince
1 Onion *thinly sliced
1 clove Garlic *finely chopped
1 tablespoon Oil
500 to 600g Cabbage *cut into bite-size pieces
1 small piece Ginger *grated OR finely chopped
1 tablespoon Curry Powder
2 tablespoons Plain Flour
2 cups Chicken Stock *OR Beef Stock if you use Beef Mince
3 to 4 tablespoons (about 50g) Tomato Paste
2 tablespoons Soy Sauce
Salt & Pepper (OR Chilli)
4 servings freshly Cooked Rice to serve
Finely chopped Spring Onion

Method
  1. Heat Oil in a large frying pan OR Pot, and cook Mince, Onion and Garlic. Add Cabbage, Ginger and Curry Powder, stir until Cabbage is slightly softened, add Flour and stir.
  2. Add Chicken Stock (OR Beef Stock) and Tomato Paste, stir, cover with a lid, and cook, occasionally stirring, until Cabbage is soft.
  3. Add Soy Sauce and stir to mix. *Note: Add Salt and Pepper (OR Chilli) if required, and stir well. Add some finely chopped Spring Onion, and serve with freshly cooked Rice.
