I love the crunchy texture of Red Cabbage. It is an antioxidant-rich vegetable that has a great mix of vitamins and minerals. Here is another way to enjoy it. This is a salad and you don’t cook Red Cabbage, but texture is as if stir-fried. Bacon adds umami and saltiness. It’s delicious and very CRUNCHY!

Ingredients

1/6 Red Cabbage *about 300g, thinly sliced
1/4 Red Onion *thinly sliced
1/2 teaspoon Salt
Black Pepper
1/4 teaspoon Sugar *optional
100g Lean Bacon *cut into small pieces
1 clove Garlic *finely chopped
1 to 2 tablespoons Olive Oil
2 tablespoons Red Wine Vinegar *OR Vinegar of your choice

Method
  1. Place the thinly sliced Red Cabbage and Red Onion in a mixing bowl. Add Salt, Black Pepper and Sugar, combine well, and set aside.
  2. Heat Olive Oil, Garlic and Bacon in a saucepan or frying pan over medium low heat. When Bacon pieces are slightly browned, remove from heat, and add Vinegar. Pour the hot mixture over the Red Cabbage, and mix well.
