We were given a boxful of Roma Tomatoes from a friend of ours on the other day. I decided to make Semi-Dried Tomatoes that we like a lot. I picked larges ones, cut them in quarters, laid them on three baking trays, then dry them in the oven. Semi-Dried Tomatoes are quite pricy if I buy from stores. Now I have a large bowlful of them. If you grow Tomatoes yourself, why don’t you try to make these yummy Semi-Dried Tomatoes?


Ingredients

Ripe Roma Tomatoes
Olive Oil
Garlic
Herbs of your choice *I used Dry Italian Herb Mix
Salt and Pepper to season

Method
  1. Preheat the oven to a low temperature (below 100℃). I set my oven at 50℃.
  2. Line baking tray(s) with baking paper. Cut Roma Tomatoes in quarters OR half lengthways. Arrange the tomato, cut-side up, on the baking paper.
  3. Place the tray(s) in the oven and let dry until semi-soft to the touch. I used ‘Fan Forced Baking’ setting and it took me a whole day.
  4. Place some Olive Oil and crushed Garlic in a heat-proof bowl, heat in the microwave to infuse the flavour. Add dried Tomatoes, Herbs, Salt & Pepper and combine well.
