There are 2 spaghetti salads that I have been repeatedly cooking for decades. One is ‘Spaghetti, Cabbage & Apple Salad’ and the other is this ‘Spaghetti, Cucumber & Tuna Salad’. I always use Canned Tuna in Brine for this salad. If you use Canned Tuna in Water, you need to adjust the amount of Salt.
100g Spaghetti *break into 5-6cm in length
1 Cucumber *200g
1/4 Red Onion *finely sliced
1 Canned Tuna in Brine *185g
1/4 cup Japanese Mayonnaise
1 teaspoon Soy Sauce
Freshly Ground Black Pepper
- Cook Spaghetti in a saucepan of salted boiling water as instructed. When the Spaghetti are cooked, drain, cool with cold water, then drain well.
- Finely slice Cucumber. Place into a bowl, add 1-2 pinches of Salt and mix to combine. Set aside.
- Place drained Tuna, finely sliced Red Onion, Mayonnaise, Soy Sauce and Black Pepper in a large bowl. Add the cooked Spaghetti to the bowl. Squeeze the cucumber to remove excess water, add to the bowl and combine well. Serve immediately.
