I used to make a pasta dish using these three ingredients, Spinach, Sweet Potato & Fetta. Many years ago, I had the pasta dish at a small cafe in Melbourne CBD. I fell in love with it, and I started making it. These days, I often leave out the pasta and make just the salad. It can be a great side dish.

Ingredients
1 Sweet Potato *Today it weighed 450g
1 bag (120g) Baby Spinach
1 to 2 tablespoons Olive Oil *extra virgin recommended
60g Fetta *crumbled
Salt & Black Pepper
2-3 tablespoons Pine Nuts *toasted
Method
- Peel Sweet Potato, cut into bite-size pieces, and steam or roast until cooked. Do not over cook as it gets mushy.
- Place Baby Spinach in a mixing bowl, add Olive Oil, Salt & Black Pepper, add cooked Sweet Potato pieces, and gently mix to combine. Baby Spinach would be half-cooked by the hot Sweet Potato, and the volume will be reduced.
- Add crumbled Fetta and toasted Pine Nuts. You can mix them, or just sprinkle them on top.
- *Note: You can simply mix this salad with freshly cooked Pasta. You may wish to add extra Olive Oil and Slat & Black Pepper.
