My ‘Super Easy No-bake Cheesecake’ is literally SUPER EASY. You only need basic ingredients, BUT you must use full-fat Cream Cheese and Thickened Cream (OR Heavy Cream). This ‘Cream Cheese Mousse’ is almost identical to the Cheesecake, but you can use fat-reduced light type products because the mixture should be set in the serving glasses or ramekins.

250g Cream Cheese *softened
1/4 cup Caster Sugar
2 tablespoons Lemon Juice
1 cup (250ml) Cream *fat-reduced or light type Cream can be used
*Note: For lighter texture and healthier option, you can replace a portion of Cream with Greek Yoghurt.
Fresh Fruit OR Fruit Sauce of your choice for topping *Today I used Frozen Mixed Berries 

  1. In a mixing bowl, whip Cream until soft peaks form.
  2. In a separate bowl, combine softened Cream Cheese, Sugar and Lemon Juice until smooth. Gradually add the whipped Cream (and Yoghurt), and combine well.
  3. Spoon the mixture into 4 serving glasses or ramekins. Leave them in the fridge to chill for 2-3 hours.
  4. Before you serve, top with some Fresh Fruit or Fruit Sauce. Today I added Frozen Mixed Berries.
