There are many restaurants in Kyiv, Ukraine’s capital city, but many Japanese tourists recommend a restaurant called ‘Puzata Hata’. They say ‘Puzata Hata’ offers many Ukrainian dishes at very reasonable prices, and it is easy to choose the dishes as you don’t need to worry about language difficulties at all. That sounds really good to me. On the internet, people share the photos of the dishes they ate there. This is the dish that caught my eye. I tried to recreate it.

Ingredients

1 large Cucumber *I used 1 Continental Cucumber, sliced to 2mm thin
1/4 teaspoon Salt
4 Boiled Eggs *cut into small pieces
2 tablespoons coarsely chopped Dill
1-2 Spring Onion(s) *finely chopped
2 tablespoons Sour Cream
2 tablespoons Mayonnaise *I used Japanese Mayonnaise
Salt & Ground Black Pepper

Method
  1. Place sliced Cucumber in a mixing bowl, add Salt and mix to combine. Set aside for 15 to 30 minutes. Squeeze (OR press) to remove excess water.
  2. Add all other ingredients, mix to combine, and season with Salt & Black Pepper. Serve immediately.
