When I first made Yoghurt Agar Jelly, I thought the firm texture of Agar Agar was not suitable for Yoghurt flavour. However, as Agar Agar is a popular vegetarian gelling agent to make gelatinous dessert, I tried to improve the texture. I reduced the amount of Agar Agar, but the jelly was still too firm. I increased other ingredients, and I was not sure if the jelly would set, but the jelly set well, firmer than I expected. Now I can share the recipe with you.

Ingredients
1 cup Unsweetened Yoghurt
1/3 cup Sugar
300ml Milk
2/3 teaspoon (about 2g) Agar Agar Powder
1 tablespoon Lemon Juice *optional
Fruit Sauce OR Jam to serve *Today I served with Berry Sauce
Method
- Combine Yoghurt and Sugar in a small bowl, and slightly warm in the microwave, OR leave it at room temperature. *Note: Yoghurt must NOT cold when add it to Milk mixture.
- Place Milk and Agar Agar Powder in a saucepan, mix well, and bring to the boil, stirring frequently. Once boiling, lower the heat and simmer for 1 minute, then remove from heat.
- Gradually add Yoghurt to the Milk mixture, constantly mixing with a whisk. *Note: If Yoghurt is cold, it partially sets Milk mixture.
- Add Lemon Juice and gently mix to combine. Pour into serving glasses OR jelly moulds, then cool in the fridge to set. Enjoy with fresh Fruit OR Fruit Sauce. Today I added Berry Sauce that was made with Frozen Mixed Berries.
- How to make the Berry Sauce: Place 1 cup Frozen Mixed Berries and 1 tablespoon Sugar in a heatproof bowl and microwave for 2-3 minutes. Cool completely. I added some uncooked Frozen Berries to the cooled sauce for better texture.

This looks wonderful!
I wanted to put this into a lollipop mould for my children. Will it be firm enough for that?
Also, will it change if I add blended fruit into the yoghurt to make different flavours?

Hello. I never tried to set it in lollipop moulds but I guess it could be firm enough if you reduce the amount of Milk. Adding Fruit puree is fine, as it is the matter of the ratio of Agar Agar and Liquid. Once you make this jelly following the recipe, you will know how much you need to reduce Milk to achieve the desired firmness. Good luck!

Ingredient ‘Milk’ will make the dessert NON-vegan. So, suggest to replace ‘Milk’ with either ‘almond milk’ or ‘soy milk’.

Hi Catherine. Thank you for your comment. I didn’t mean this recipe vegan, but I hope vegan people can adapt this recipe to vegan, replacing Milk and Yoghurt with vegan products.
