There is a dessert called ‘Annin Tofu’ that is a soft jelly made of Apricot Kernel Milk, Agar and Sugar. It is impossible to find Apricot Kernel Milk where I live, but it tastes similar to Almond Milk. You know that Almond Milk is very popular these days and it is available from any supermarkets. Here is an Asian dessert for you to try.

Ingredients

2 cups (500ml) Almond Milk
1 sachet (8g) Queen’s ‘Jel-It-In Vegetarian Gelling Powder’ *OR 4g (1 & 1/4 teaspoons) Agar Agar Powder

3 to 4 tablespoons Sugar
Passionfruit OR Canned Mandarin Segments *optional

Method
  1. Place Sugar and Gelling Powder (OR Agar Agar) in a saucepan and mix well. Add Almond Milk and mix well, and bring to the boil, stirring well. Once it started boiling, remove from heat. *Note: If you use Agar Agar Powder, use it according on the instruction on the package.
  2. Pour the milk mixture in the serving glasses or a plastic container. When cool enough, cover with plastic wrap or a lid and place in the fridge for a few hours or until completely set.
  3. Enjoy the jelly with your favourite sauce, or cut into small cubes and mix with Canned Mandarin Segments with syrup to enjoy.
