The main ingredients for this dish are Pork and Cabbage. I usually add Green Sweet Chilli or Green Capsicum. Onion, Carrot and Garlic Shoots are also good. When you cook this type of stir-fry dish, you must prepare everything before you actually start cooking.

Ingredients

400g Pork *thinly sliced
1 pinch Salt
1 tablespoon Soy Sauce
1 tablespoon Sake (Rice Wine)
2 to 3 tablespoons Potato Starch Flour
2 tablespoons Oil
1 clove Garlic *finely chopped
1/4 Cabbage *400 to 500g
1 to 2 Green Sweet Chilli *OR other vegetables of your choice

Sauce

1 tablespoon Sugar
2 tablespoons Miso *red type OR white type
1 tablespoon Soy Sauce
2 tablespoons Sake (Rice Wine)
1 teaspoon Sesame Oil
1-2 teaspoons Toban Djan (Chili Bean Sauce)

Method
  1. Place thinly sliced Pork in a bowl, add 1 pinch Salt, Soy Sauce and Sake, massage, then set aside.
  2. Combine all the sauce ingredients in a small bowl, taste it, and alter the flavour to suit your taste. You may wish to add more Toban Djan (Chilli Bean Sauce) or more Sugar.
  3. Prepare vegetables. Cut them into the size that is easy to eat.
  4. Add Potato Starch Flour to the pork and massage. You DO NOT need to coat every single slice.
  5. Add Oil to a hot wok or large frying pan over high heat, cook the pork, stirring. Once cooked, transfer to a plate.
  6. Cook Cabbage, Garlic and other vegetables, stirring and tossing. Adding 2 to 3 tablespoons Water will help to cook quickly.
  7. When the vegetables are almost cooked, return the pork, add the sauce, and cook until all combined well. Enjoy with freshly cooked Rice.
