Crispy Chilli Oil is now one of my Must-Haves. It’s not very hot, that’s why I can enjoy it very much with anything. ‘Crispy Chilli Oil Chicken’ can be made instantly by mixing some leftover Cooked Chicken and Crispy Chilli Oil. This ‘Cucumber & Cream Cheese’ is the same. I just mixed Cucumber and Cream Cheese with Crispy Chilli Oil. It would be a great ‘Otsumami’, that is a Japanese term for simple dishes OR snacks to enjoy with alcoholic drinks. Chilled white wine would be lovely, but I just ate it as a snack today.

Ingredients

1/2 to 1 Continental Cucumber *about 200g
1/4 of a block (60g) Cream Cheese *cut into small cubes
1 tablespoon Crispy Chilli Oil *I used ‘Lao Gan Ma’ brand Crispy Chilli Oil

Salt *optional

Method
  1. Cut Cucumber into bite-size pieces. I cut it diagonally as I was rotating it on a cutting board.
  2. Add 1 pinch Salt and mix to combine, then add Cream Cheese and Crispy Chilli Oil, and gently combine. Serve immediately as water would come out from Cucumber.
