I used Earl Grey Tea, but you can use your favourite Tea. The fragrance of Tea can be easily lost when it is boiled. That happened when I made Earl Grey Tea first, then added Sugar and simmered into syrup. I recommend to make syrup first, then add Tea (bags OR leaves) to infuse.

Makes

About 150ml

Ingredients

1/2 cup Water
1/2 cup Caster Sugar
2 Earl Grey Tea Bags

Method
  1. Make Basic Syrup. Place Water in a small saucepan and bring it to the boil.
  2. Add Caster Sugar and bring back to the boil over medium heat. Sugar should be completely dissolved by then. Remove from the heat.
  3. Add Earl Grey Tea Bags and set aside to cool. When the desired strength is infused, remove Tea Bags. You can squeeze the Tea Bags.
  4. Enjoy the syrup with Pancakes, Ice Cream, OR your favourite dessert. You may wish to use it for a cocktail. It goes well with Whisky. Store the syrup in the fridge.
