I used Earl Grey Tea, but you can use your favourite Tea. The fragrance of Tea can be easily lost when it is boiled. That happened when I made Earl Grey Tea first, then added Sugar and simmered into syrup. I recommend to make syrup first, then add Tea (bags OR leaves) to infuse.

1/2 cup Water
1/2 cup Caster Sugar
2 Earl Grey Tea Bags
Method
- Make Basic Syrup. Place Water in a small saucepan and bring it to the boil.
- Add Caster Sugar and bring back to the boil over medium heat. Sugar should be completely dissolved by then. Remove from the heat.
- Add Earl Grey Tea Bags and set aside to cool. When the desired strength is infused, remove Tea Bags. You can squeeze the Tea Bags.
- Enjoy the syrup with Pancakes, Ice Cream, OR your favourite dessert. You may wish to use it for a cocktail. It goes well with Whisky. Store the syrup in the fridge.
