I was just about to cook ‘Pan Fried Zucchini’. Then I saw a bag of Polenta (Cornmeal), which I need to use up soon. I instantly thought about my ‘Fried Okra’ recipe. I cooked Zucchini in the same method. The grainy coating with Polenta and crunchy Zucchini are a good match. Next time I will double the recipe and cook more.

Ingredients

1 Zucchini *sliced 1cm thick
1 tablespoon Plain Flour
1 Egg
Oil for frying

Coating
2 tablespoons Plain Flour
2 tablespoons Polenta (Cornmeal)
1/4 teaspoon Fine Salt
1/2 teaspoon Onion Powder
1/4 teaspoon Finely Ground Pepper OR Ground Chilli
*Note: You can add Garlic Powder and other Spices.

Method
  1. Heat Oil to about 180℃.
  2. Wash Zucchini, cut about 1cm thick, and place in a bowl. Sprinkle Flour over to lightly coat, add whisked Egg, and combine.
  3. In a shallow bowl, combine Flour, Polenta (Cornmeal), Salt, Onion Powder and Pepper (OR Chilli).
  4. Coat Zucchini slices with Polenta mixture and fry, several pieces at a time, for 1 to 2 minutes. DO NOT over cook. Drain on paper towel.
