When I need to cook Broccoli for a Spaghetti dish, I usually cook Broccoli in the same salty water that is cooking Spaghetti. I add Broccoli to the water when Spaghetti are half-cooked, and this method works fine. However, for this dish, there is an alternative way and Broccoli tastes much better. It’s my favourite steam-frying method.

Ingredients

2 servings Spaghetti
Salt for cooking
160g thinly sliced Pork Belly *cut into bite-size pieces
1 tablespoon Oil
Salt & Pepper
1 small head Broccoli *cut into bite-size florets
1 clove Garlic *finely chopped
Chilli Flakes as required
2 to 3 tablespoons Water
Salt & Black Pepper
1 tablespoon Soy Sauce

Method
  1. Cook Spaghetti in boiling salted Water according to the instruction.
  2. Heat Oil in a large frying pan over medium heat, cook Pork until nicely browned, and season with Salt & Pepper.
  3. Add Broccoli, Garlic and Chilli to the pan, add Water, cover with a lid, and cook until the water in the pan is evaporated.
  4. Remove the lid, add Spaghetti and about 1/4 cup salty water that was cooking Spaghetti, stir, add Soy Sauce, and stir to combine well. Add extra Salt and Pepper if required, and enjoy.
