I have heard about ‘Eton Mess’, that is a traditional English dessert consisting of a mixture of strawberries, broken meringue and whipped cream. I have never eaten it, but it probably tastes like our famous ‘Pavlova’. ‘Eton Mess’ inspired me to make this dessert, which is seriously delicious.
1 to 2 Mangos
200ml Thickened Cream *whipped
1 tablespoon Icing Sugar
40g Meringue *broken into small pieces
- Cut off Mango cheeks, cut the flesh into small pieces. Scrape off the remaining mango flesh and puree until smooth using a hand blender.
- Place Thickened Cream and Icing Sugar in a bowl, beat until thick. Add broken Meringue and Mango pieces, and stir to just combined.
- Layer some of the meringue mixture and mango puree in serving glasses. Top with the passionfruit pulp and serve immediately.
