I have heard about ‘Eton Mess’, that is a traditional English dessert consisting of a mixture of strawberries, broken meringue and whipped cream. I have never eaten it, but it probably tastes like our famous ‘Pavlova’. ‘Eton Mess’ inspired me to make this dessert, which is seriously delicious.

Ingredients

1 to 2 Mangos
2 Passionfruit
200ml Thickened Cream *whipped
1 tablespoon Icing Sugar
40g Meringue *broken into small pieces

Method
  1. Cut off Mango cheeks, cut the flesh into small pieces. Scrape off the remaining mango flesh and puree until smooth using a hand blender.
  2. Place Thickened Cream and Icing Sugar in a bowl, beat until thick. Add broken Meringue and Mango pieces, and stir to just combined.
  3. Layer some of the meringue mixture and mango puree in serving glasses. Top with the passionfruit pulp and serve immediately.
