You want to make Okonomiyaki, Japan’s famous savoury pancakes, but Okonomiyaki Sauce is not available where you live? DO NOT give up! This home-made Okonomiyaki Sauce is pretty good. When I moved to Australia nearly 30 years ago, I often made this Okonomiyaki Sauce.

Ingredients

*Note: 1 tablespoon is 15ml
2 to 3 tablespoons Sugar *alter to suit your taste
3 tablespoons Lea & Perrins Worcestershire Sauce
2 tablespoons Tomato Ketchup *I use Heinz Tomato Ketchup
2 tablespoons Soy Sauce *I use Kikkoman Soy Sauce
1/2 teaspoon Corn Starch Flour
1 teaspoon Oyster Sauce *optional

Method
  1. Mix all ingredients in a heat-proof bowl very well. Heat in the microwave and bring to the boil, mix well and set aside to cool. You can do this process using a small saucepan. Cook over a low heat, stirring constantly, until thick.
  2. *Note: Potato Starch can be used instead of Corn Starch, however, Potato Starch tends to lose the thickness as it cools, and the sauce might become runny.
