My super-quick & easy ‘Fresh Tomato Salsa’ can be mixed with cooked seafood and you can make such a delightful seafood platter instantly. Today I used frozen uncooked Prawns. It’s so simple and easy.

2 to 3 Servings
Ingredients
250g Prawns
2 large Fresh Tomatoes
1 small clove Garlic *finely chopped
1/4 Red Onion
1/2 to 1 Red Chilli OR Jalapeño
2 to 3 tablespoons chopped Coriander Leaves
1 tablespoon Lime Juice *OR Lemon Juice
Salt & Black Pepper
Method
- If you use frozen prawns, thaw completely. Cook them in the boiling salted water until just cooked enough, cool in cold water and drain.
- Remove seeds (watery parts) from Tomatoes and finely dice. Chop up Garlic, Onion and Chilli finely. *Note: Make sure you taste the fresh chilli before adding it!
- Place all ingredients in the bowl, season with Salt & Black Pepper. If you need more heat, you can add Tabasco. Pickled Jalapeño is also good.
