The salty Anchovy, Garlic and Olive Oil, what a great combination! Today I stir-fried Cabbage and Onion with those three great things, and made this Frittata, cooked in my rice cooker as always. Absolutely simple. No fancy ingredients are necessary, but it was DELICIOUS!!! I could have added some Parsley.

Ingredients

About 250g Cabbage
1 Onion
1 clove Garlic *finely chopped
1 tablespoon Olive Oil
3 to 4 fillets Anchovy *finely chopped
4 Eggs
1/2 cup Self-Raising Flour
1/2 teaspoon Salt *reduce if you add more Anchovy
Ground Black Pepper as required *I recommend to add generously
1/2 to 1 cup shredded Tasty Cheese (Cheddar) *OR Cheese of your choice
*Note: You can add some finely chopped Parsley as well.

Method
  1. Line the base of rice cooker’s inner pot with baking paper. *Note: It might be unnecessary depending on the condition of your inner pot.
  2. Cut Cabbage and Onion into small pieces, about 1cm in size. Finely chop up Garlic. Heat Olive Oil in a frying pan over medium heat, cook Onion and Garlic for a few minutes, then add Cabbage.
  3. When Cabbage is softened, add Anchovy, and stir for a minute. Remove from heat and set aside.
  4. Combine Eggs, Self-Raising Flour, Salt & Pepper in a mixing bowl. Add shredded Cheese and the Cabbage & Onion mixture, and mix to combine. *Note: You can add Parsley as well.
  5. Pour the mixture into the prepared rice cooker’s inner pot, spread evenly, and start cooking at ‘Cake’ setting.
  6. If it is not cooked yet, leave it in the hot rice cooker for 10 more minutes or heat extra time. Turn out on a plate, and carefully peel away baking paper. Serve hot or cold.
  7. *Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter. It took 40 minutes for my rice cooker to cook it.
  8. *Oven Baking: My Rice Cooker Frittata can be baked in the oven. Pour the mixture into a buttered baking dish, and bake at 180℃ for 30 minutes or until cooked.
