I was going to make Zucchini Frittata today, but I couldn’t bother grating it. I chopped up Zucchini into small pieces and I added Frozen Sweet Corn Kernels. It was very quick to prepare, I poured the mixture into rice cooker’s inner pot, then pressed the button to start cooking. Every time I cook Frittata in rice cooker, I am impressed with the result. So easy and energy efficient.

Ingredients
1/2 to 1 Onion *finely chopped
1 clove Garlic *finely chopped
1 Zucchini *about 250g
1 cupful Sweet Corn Kernels *frozen is OK
20g Butter
Salt & Pepper
4 Eggs
1/2 cup Self-Raising Flour
1/2 teaspoon Salt
Freshly Ground Black Pepper
1 cup shredded Tasty Cheese *Cheddar Cheese
Method
- Line the base of rice cooker’s inner pot with baking paper. It might be unnecessary depending on the condition of your inner pot. *Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter.
- Trim the ends of Zucchini, cut into quarters in lengthways, and cut into 1cm thick pieces.
- Melt Butter in a frying pan over medium heat, cook Onion and Garlic for a minutes, add Zucchini, stir for a few minutes, add Corn Kernels, stir for a minute, then lightly season with a pinch Salt and Pepper. Set aside while you are preparing other ingredients.
- Place Eggs, Self-Raising Flour, 1/2 teaspoon Salt and some Pepper in a mixing bowl, and mix well. Add shredded Cheese and precooked Vegetables, and gently mix to combine.
- Pour the mixture into the prepared rice cooker’s inner pot, spread evenly, push down Zucchini pieces into the batter, and start cooking at ‘Cake’ setting.
- If it is not cooked yet, leave it in the hot rice cooker for 10 more minutes or heat extra time. Turn out on a plate, and carefully peel away baking paper. Serve warm or cold.
- *Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter. It took 40 minutes to cook.
- *Oven Baking: My Rice Cooker Frittata can be baked in the oven. Pour the mixture into a buttered baking dish, and bake at 180℃ for 30 minutes or until cooked.
