I was a uni student when I first ate the delicious Fruit Sandwich. It was an ordinary sandwich made with Japanese Milk Bread and the filling of whipped cream and fruit. I had never had such a combination before. As Japanese Milk Bread is impossible to find where I live now, I use Brioche Loaf. Strawberry can be replaced with your favourite fruit such as Banana, Peach, Kiwi Fruit, Grapes, etc.

2 Sandwiches

Ingredients

4 slices Brioche Loaf *OR Japanese Milk Bread Loaf
1/2 cup Thickened Cream
2 tablespoons Caster Sugar
1 teaspoon Rum *OR Lemon Juice, Vanilla, OR other flavour
60g Mascarpone *optional
1 punnet Strawberries *choose small ones

Method
  1. In a mixing bowl, whip Thickened Cream and Sugar until soft peaks form, add Rum (OR other flavour) and Mascarpone, and mix well.
  2. Place a slice of Brioche Loaf on a piece of plastic food wrap, thinly spread the Cream, and place Strawberries.

  3. Fill the gap between Strawberries with the Cream and cover completely. Place another slice of Brioche on top, and wrap it with the plastic wrap. Place in the fridge for 30 minutes or longer.

  4. Cut the sandwich in half and enjoy.
