You don’t need to cook anything to make this delicious treat. If you have a food processor, it is super easy to make. This recipe is very versatile. By replacing some ingredients with others, and adding extra ingredients, you can create your own ‘Apricot Delight’.

Ingredients

200g Dried Apricots
1 cup Desiccated Coconut *OR reduce the amount
1 tablespoon Oil *I used Sunflower Oil
*Note: You can add Honey OR Syrup such as Maple Syrup instead of Oil
1-2 teaspoons Grand Marnier *optional

Additional Ingredients
1 to 2 tablespoons Caster Sugar for extra sweetness
1 to 2 tablespoons Orange Juice for extra moisture
Finely chopped Nuts, Chia Seeds, etc.

Method
  1. Place Dried Apricots in a food processor and process into fine pieces. Add Desiccated Coconut, Oil (OR Honey, Syrup, etc.) and Grand Marnier (if you add it), and process into moist mixture. You can add some Sugar for extra sweetness.
  2. When the mixture is too dry to roll into balls, you need to add liquid for more moisture. It can be Water, Honey OR Syrup, but I strongly recommend to add Orange Juice. Add a small amount at a time.
  3. When the mixture is moist enough to roll, it is done. If you want to add extra ingredients such as Nuts, add them now. Roll it into bite-size balls, OR pack in a small container FIRMLY, chill in the fridge, then cut into bite-size pieces.
