I made Apricot Sauce’ on the other day and there was some leftover in the fridge. I decided to make these delightful & gluten-free ‘Apricot & Oats Balls’. Simply mix same amount of Apricot Sauce and Instant Oats (or ground Rolled Oats) and heat in the microwave. I added Desiccated Coconut and chopped Dry Apricots as well. Making these balls can be a fun activity for children.

Ingredients
1/2 cup ‘Apricot Sauce’ *Find my recipe here.
1/2 Instant Oats *OR Rolled Oats
1/4 to 1/2 cup and extra Desiccated Coconut
6 to 8 Dry Apricots *cut into small cubes
Method
- Place Apricot Sauce and Instant Oats in a heat-proof bowl, heat in the microwave at full power for 1 minutes. *Note: If you use Rolled Oats, grind or process into fine crumbs as Rolled Oats takes longer time to cook.
- *Note: Some people enjoy eating raw Oats. You can simply mix them, but you might need more Oats if you don’t heat.
- Add Desiccated Coconut and chopped Dry Apricots, and combine evenly. If the mixture is too soft to roll, you need more dry ingredients.
- Place 2-3 tablespoons Desiccated Coconut on a plate. Roll a heaped teaspoon of mixture into balls and roll in coconut to coat.
