My method of making Basic Syrup is simple. I cook same amount of Water and Sugar until slightly thickens. You can make Lemon Syrup in the same way. Cook same amount of Lemon Juice and Sugar. I don’t cook it for too long, but you can simmer it down to make the Syrup thick. This Lemon Syrup can be used to make cocktails OR lemonade. I love to mix it with soda water.


*Note: Measure the amount of Lemon Juice first, and add the same volume of Sugar. Today Lemon Juice was 200ml, so I added 200ml Sugar. Alter the amount accordingly.
200ml Lemon Juice
200ml Sugar
Zest of 1 Lemon *peel yellow part only using vegetable peeler, alter the amount depending on the amount of Lemon Juice

  1. Place a same amount of Lemon Juice and Sugar in a saucepan. Bring to the boil, then lower the heat and simmer for a few minutes. *Note: If you want to make the Syrup thick, simmer longer.
  2. Add Lemon Zest and remove from the heat. Cool in the saucepan. *Note: Please use unwaxed Lemon. Lemons from the backyard are perfect.
  3. When the Syrup is cooled, strain out the Pump and Zest. Place in a clean jar or bottle, and store in the fridge.
