Sardines are healthier and more sustainable fish. Sardines are rich in numerous nutrients. They are one of the most concentrated sources of the omega-3 fatty acids EPA and DHA. Sardines are an excellent source of vitamin B12. Why don’t we eat them more? Tinned Sardines are easy to use. This is one of my favourite Sardine dishes.

Ingredients
Spaghetti 1 serving
Tinned Sardines in Olive Oil 1/2 to 1 tin
Garlic 1 small clove
Fresh Chili or Dried Chili Flakes as required
Soy Sauce 2 teaspoons
Rocket 1 handful *save some for garnish, this can be replaced by baby spinach
Method
- Cook Spaghetti in a large saucepan of salted boiling water as instructed.
- Heat 1 tablespoon of olive oil from the tin in a frying pan, cook Garlic and Chilli until aromatic, add Sardines, Spaghetti from the pot with some liquid, Soy Sauce and Rocket, quickly combine well. It doesn’t take long at all.
- Place saved Rocket on top and serve.
