I tried to make ‘Strawberry Milk Jelly’. All recipes that I found required heating Milk and Sugar first, then add Gelatine, and finally add pureed Strawberries. I tried one recipe and I was totally disappointed. Guess what happened when I added pureed Strawberries to the warm milk mixture? Milk curdled because of the acidity of Strawberries. I decided to make my own method. It is easy & quick, no technic is necessary, and it works!


Makes

4 to 6 Servings

Ingredients

3 teaspoons Gelatine Powder *10 to 12g
3 to 4 tablespoons Water
1 punnet (250 to 300g) Strawberries
1/3 cup Sugar *1/2 cup for sweeter flavour
2 cups Milk
Extra Strawberries for topping *optional
Strawberry Sauce *optional

Method
  1. Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.
  2. Wash and hull Strawberries. Using a hand blender or food processor, process Strawberries into smooth puree. Place the puree and Sugar in a saucepan, bring to the simmer over medium heat.
  3. Simmer for a few minutes, add Gelatine, remove from the heat. Stir until Gelatine dissolves. Add cold Milk at once, quickly stirring with a whisk.
  4. Pour the mixture into serving glasses. Place them in the fridge and leave to set. Serve with topping of fresh Strawberries and/or Strawberry Sauce.
