Eton Mess is a traditional English dessert consisting of a mixture of strawberries, broken meringue and whipped cream. I have heard about it and read about it, and it inspired me to make a dessert ‘Mango & Passionfruit Mess’, which is absolutely easy to make and delicious. Then I finally made ‘Eton Mess’. I understand that this dessert was first made to feed many hungry boys at the famous boarding school in England. It was a brilliant idea!

Ingredients

1 punnet (*about 250g) Strawberries *cut in halves OR quarters
200ml Thickened Cream *whipped
1 tablespoon Icing Sugar
40g Meringue *broken into small pieces

Strawberry Sauce
1/2 punnet (*about 125g) Strawberries *Raspberries are also good!
2 tablespoons Sugar

Method
  1. Make Strawberry (Raspberry) Sauce. Rinse Strawberries, remove the hulls, and slice thickly. Place them in a saucepan, squash a little bit using a masher or spoon to let some juice come out, as this will speed up the cooking process. Add Sugar and bring to the boil over medium heat, stirring occasionally. Reduce heat to low and simmer for 10 minutes, stirring occasionally. The sauce will thicken up slightly as it cools.
  2. Rinse 1 punnet of Strawberries, remove the hulls, and cut in halves or quarters.
  3. Place Thickened Cream and Icing Sugar in a bowl, beat until thick. Add broken Meringue and mix to combined.
  4. Layer some of the Cream & Meringue mixture, Strawberries and Strawberry Sauce in serving glasses. Top with the Strawberry sauce and serve immediately.
