I use ‘Garlic, Soy Sauce and Mirin’ to season many dishes. It is my favourite flavour. Today I used those three to season this Stir-fried Choy Sum & Dried Shrimps. The amount of this dish that I cooked today was supposed to be 2 to 3 servings, but I confess I ate all of it.

2 to 3 Servings
Ingredients
2 tablespoonfuls Dried Shelled Shrimps
Boiling Water to soak Dried Shelled Shrimps
1 bunch Choy Sum *about 350g
1 tablespoon Sesame Oil
Sauce
1 clove Garlic *grated
1/2 teaspoon Asian Chicken Bouillon Powder
1 tablespoon Soy Sauce
1 tablespoon Mirin *OR Sake (Rice Wine)
*Note: Mirin adds slight sweetness.
Chilli Flakes as required *I added 1/8 teaspoon
Method
- Place Dried Shelled Shrimps in a small bowl and add Boiling Water just enough to cover. The amount of Boiling Water would be about 3 tablespoons. Set aside for 15 minutes.
- Combine all the Sauce ingredients in a separate small bowl.
- Wash Choy Sum very well, cut into 5cm long pieces, and separate hard stem parts and green leafy parts.
- Heat Sesame Oil in a frying pan, cook hard parts of Choy Sum over high heat for a few minutes, then add the soaked Dried Shrimps with all water. Stir for a few minutes as the water evaporates and helps cooking process.
- Add leafy parts and stir, add the Sauce, and stir until the leafy parts are cooked. Serve immediately with freshly cooked Rice.
