Hash Browns are not healthy food. But they are yummy and I love them. I have shared my ‘Hash Brown Potatoes & Chickpeas’ recipe, that is my attempt to make the ‘not healthy’ food into ‘less unhealthy’ food. Today I used Broccoli instead of Potatoes. I believe these ‘Hash Brown Broccoli’ are ‘much less unhealthy’. They are yummy!

Ingredients

1 head Broccoli *finely chopped OR coarsely grated
1/2 Onion *finely chopped
1/2 teaspoon Salt
1/4 teaspoon Ground Pepper
2 Eggs
1/2 cup Plain Flour OR Self-Raising Flour *plus extra
Oil for frying

Method
  1. Place Broccoli and Onion in a mixing bowl, add Salt, Black Pepper and Eggs, and mix well. Add Flour and mix to combine. *Note: If the mixture is too runny, add extra 2-4 tablespoons Flour. When Eggs are larger and more water comes out from the vegetables, you would need extra Flour.
  2. Heat a generous amount Oil in a frying pan, thick-base pan preferred, over medium low heat. Form patties about 1cm thick and cook until nicely browned and crispy. Flip over and cook until the other side is also nicely browned and crispy.
  3. Transfer onto paper towel. Enjoy while they are still hot with your favourite sauce. Today I sprinkled with some fine Salt and enjoyed without sauce.
